Where to Go for an Uni Fix in San Francisco

Lauren Sloss of The Bold Italic notes the increasing prevalence of uni (sea urchin) on San Francisco menus, surveying dishes from restaurants such as Bar Crudo, SPQR and ICHI Sushi. Her adventure yields two particularly valuable tips. Swan Oyster Depot serves live uni gonads (the part we consume) straight from the shell, though she cautions that the animal may move when on your plate. And a great indicator of the freshness of your uni is to examine how intact it is, for it will lose structure as it ages.
