"It's always really a delicate balance because of course sometimes you have to give incredible praise but unfortunately sometimes you have to give criticism. For me, I'm a chef like they are, it's an interesting relationship that a chef has with the restaurant critic - full stop. But to actually come face to face...We always try to be fair and I think we do treat the chefs with a lot of respect."
