Best Thing We Ate This Week: Vegan Chicharrones at Mettle

Only in Austin would you find vegan pork skins at a trendy upscale bistro tucked away in the hippest part of town. Chef Andrew Francisco says he loves vegetables and experimenting with them, and thank goodness for that: at East Austin's Mettle he serves his airy, crunchy snack made from smoked water and tapioca with vegan bacon powder as an appetizer with salsa verde and roasted orange salsa. But soon you may be able to find the treats all over town, since Francisco plans to sell them to other restaurants and grocery stores like Wheatsville Co-Op. Look for Aqua Crisps coming at you sometime in the next year, or head to Mettle to chow down now.
