Bayless and Untitled Restaurateur Plan Four West Loop Concepts

Between three new hotels and the new Google headquarters, the West Loop will see an influx of tourists and locals over the next two years. Anticipating the increase in consumers, restaurateurs are chomping at the bit to open new restaurants in the area. The latest celebrity chef to eye Fulton Market is none other than Rick Bayless. The celebrity chef with two successful River North restaurants (Frontera GrillTopolobampo and XOCO) as well as a fast-casual chain (Frontera Fresco) is negotiating a lease on 900 W. Randolph St, according to Crain’s. The restaurant located next to ‪Columbus Meat Market‬ would be Bayless's first major project since 2009, and would serve his signature Mexican cuisine.

While Bayless’s restaurant is still in the very early stages, another restaurateur has three concepts planned for the area around the former cold storage building that will become Google Inc. Real estate and restaurant investor Marc Bushala plans a Thai restaurant in a former art gallery as well as a gastro-distillery that will serve craft spirits and diner-style cuisine. Bushala’s last project was the speakeasy-style behemoth Untitled. Anxious diners can expect 2014 openings for these new spaces and more in the increasingly trendy restaurant mecca, but just to be safe, getting in line for a table now wouldn’t hurt.
