Uchi Runs Its Very Own Version of Chopped Competition, Called 86'D

What does the Uchi family do in their time off? Cook and compete, naturally! Their in-house version of Chopped called 86’d is all about the food: Uchi staff members compete in three rounds – appetizer, entrĂ©e and dessert – to see which back-of-house newcomer will take the title.

Tribeza magazine gives the skinny on a recent 86’d competition, where line cooks and servers found ingredients like “guava, pepperoni, fingerling potatoes and a bottle of chili paste” for apps and “Rock Cornish game hen, smoked basmati rice, lotus root and habanero oil” for entrees.

We won’t spoil the story by saying who wins and what they made, but we will say that the judges’ panel of Uchi/Uchiko pastry chef Philip Speer, John Bates of the Noble Sandwich Co., Jodi Holzband of Tasty Touring and Diane Dixon of Keeper Collection were a mighty group to impress.
