Taco of the Day: Grilled Brunkow Cheese Taco at Takito Kitchen

It was especially difficult to decide which taco would represent the newest addition to the west side taco scene, Takito Kitchen. The crispy redfish served on a purple hibiscus tortilla was a colorful option. The new lamb chorizo taco with jicama escabeche was equally tempting. But we wanted to give the vegetarians a shout out with the Brunkow cheese taco. Brunkow, a Wisconsin creamery, specializes in Brun-Uusto or “bread cheese.” It’s that cheese you see sitting on hibachi grills at the farmers markets. At Takito, it is served on a corn tortilla with morita salsa, chayote and kale. The taco is topped with peanuts and rhubarb chutney. Between the charred cheese, crunchy peanuts are tart chutney - carnivores won’t miss the meat.
