One Thursday a month - it happens to be May 9 this month - L’Espalier’s mâitre d' hotel and fromager Louis Risoli indulges guests in a wine and cheese sampling as part of the monthly Salon Sessions at the tony Back Bay French restaurant. Participants get to relax and enjoy delectable cheeses paired with fine wines from California while overlooking Boylston Street. Risoli is one of the most experienced fromagers in the city, bringing a passion and knowledge that inspires guests to want to know more about their cheese as a way to enjoy it.
