Kahan, Izard and The Aviary Bring Home Beards

Paul Kahan
It’s a tie! Can they (The James Beard Foundation) do that? Although the immediate answer is, “They are the James Beard Foundation, they can do whatever they want.” The actual answer is a tie, like the one that resulted between Chicago’s Paul Kahan and New York’s David Chang, happened twice since the 1990. Last night, both chefs were awarded the title of Outstanding Chef. "You can't beat Chang, but a tie is OK," Kahan said. Kahan, whose restaurants include Blackbird, Avec, The Publican, Big Star and Publican Quality Meats, took home the award for Best Chef: Great Lakes in 2004.

This year, that title went to Stephanie Izard for her work as her growing restaurant empire that includes Girl & the Goat as well as Little Goat. She was up against Dave Beran of Next, Paul Virant of Vie and Perennial Virant and Andrew Zimmerman of Sepia. Also representing Chicago, and more specifically, the West Loop, The Aviary was honored earlier in the evening with the Outstanding Bar Program award. "We have the best job in the world,” said beverage director Charles Joly. “We make cocktails for people and take the guest experience to another level."
