How does the saying go? You can take the gourmet chef out of a kitchen…and he turns into a gourmet chef on a food truck. It may not be the conventional career path, but after working at Everest and then fine dining restaurants in Spain and New Orleans, chef Sam Barron left the kitchen to be his own boss alongside his wife Sarah Weitz. Together they outfitted an old delivery truck with a griddle, deep frier, oven, prep space and refrigerator. The Fat Shallot was one of the first food trucks in Chicago to earn a mobile food prepare license and have been on the road since early May.
