Eric Greenspan Closing The Foundry on Melrose for "Next Phase"

Word just dropped that Eric Greenspan will close The Foundry on Melrose after this weekend for a bit of retooling. According to the release, Greenspan and business partners Jay Perrin and Jim Hustead will celebrate the restaurant's current incarnation with some of the chef's favorite dishes from the past six years, plus live music on Friday and Saturday night. Come Sunday, May 19, the Foundry will close "in preparation for the next phase," meaning a new menu for the back patio, a refreshed look, a new bar team leading the front and the opening of the grilled cheese restaurant next door.

"I don't want to give up too much about the restaurant yet," Greenspan told us from the set of his new web series, The Melt Master: A Grilled Cheese Adventure Show. (Check out today's new epi, where Greenspan goes head-to-head against Jazz and Tui from Jitlada.) "We're reshaping the flow and ebb of each little part. It's going to be a lot more fun for everybody if we slide into it."

The Foundry on Melrose will reopen in a couple of months, but while it's on hiatus, Greenspan's Grilled Cheese will debut around July 4. Meanwhile, the group is still operating The Roof on Wilshire, and they've consulted on the food and beverage program for the new MGN Five Star Cinemas, which will open in Glendale soon.
