Husband-and-wife team Tim and Bronwyn Wiechmann, chef/owner and GM of T.W. Food in Cambridge, are behind the German and Eastern European outpost featuring the cuisine from chef Tim’s German heritage and the surrounding region. The menu includes classics such as a slew of housemade wursts, appetizers of borscht and foie gras knish, entrees of spatzle and Bavarian roast chicken, and sides of German potato salad and reisling sauerkraut. There are many other specialties from Austria, Northern Italy, Poland, Romania and Hungary on the menu. As per his style, Wiechmann will cull seasonal ingredients from local farms. Prices run $5-$16 for appetizers, and $18-$25 for main courses.
A selection of Central and Eastern European wines and beers, handcrafted cocktails, as well as American ales brewed in the European style and handcrafted cocktails, go with the cuisine.
The setting is designed to evoke the feel of a European mountain tavern with elements sourced from Wiechmann’s travels. Those items include hand-stitched embroidered panels and copper reliefs; 100-year-old gothic chairs cushioned with velvet; and slatted wooden tables with period hutches.
Bronwyn will feature an outdoor biergarten that overlooks Union Square, featuring tables fashioned from beer stumps.
To start, Bronwyn will be open daily for dinner and drinks, with brunch and late-night sausage to follow. Hours are daily 5 PM-1 AM, with the kitchen serving until 11:30 PM. Biergarten will be open daily 5 PM to midnight, weather permitting.
