Balena’s Executive Sous Chef Pops-Up in Evanston

Joe Frillman is the executive sous chef at Balena. However, Monday through Wednesday, he will be the executive chef at his own pop-up dinner hosted by Company in Evanston. The meal will be a five-course Italian inspired dinner using ingredients from local farmers markets. Frillman will not finalize the menu until the day before when he can shop for the freshest produce. Details of the dinner are sparse, but we know that some courses will be served family-style, some will involve pork and overall it will not be safe for gluten or dairy-free diners. Those who have enjoyed Frillman's cuisine at Balena know that the meal will be delicious. Tickets cost $65 and the dinner is BYOB.
