Sometimes, when the world doesn't make sense and we're faced with another cold, gloomy Chicago night, we just need a big, steaming bowl of cheese. Enter The Gage's signature N-17 "fondue", which features a melted combination of Butterkase, Brie and spinach. The fondue spends some time under the broiler to develop a crispy top layer before it is served with thin strips of toast. The crackerlike bread is just the right amount of carbs to carry the rich cheese combination. Bits of spinach hardly make the whole thing healthy but contrast with the buttery flavor of the cheese. It's best enjoyed with a glass of white wine while watching the rain fall onto Millennium Park.
