Sweet Baby Ray’s Smokehouse, Bourbon & Beer Opens Tomorrow

It is only logical that after a company makes BBQ sauce for nearly 40 years, that company wants to put sauce on some slow-cooked meat. Chicago-based, Sweet Baby Ray’s, will open a smokehouse named after their signature sauce. After some delays due to weather, the grand opening will be held tomorrow at the Wrigleyville location.

The centerpiece of the space will be a smoker that holds 850-pounds of meat and goes by the name “Southern Pride.”The rustic space hardly resembles its sports bar neighbors. Wood tables are branded with the restaurant’s name, a bar made from distressed wood overlooks an amber-lit whiskey collection, and a small covered patio provides outdoor seating.

What will diners be smothering that sauce on? Start with smokehouse nachos or bacon deviled eggs dusted with BBQ rub. Ribs are served St. Louis or Memphis-style in half or full slabs. Other meats that take a trip in the smoker include brisket, Texas sausage, chicken and pulled pork. A separate sauce menu features seventeen sauces ranging from original to honey chipotle.

Ward off the meat sweats with one of the 100 bourbon and ryes. Beer options include the Texas favorite, Shiner Beers, and Kentucky Bourbon Barrel Ale as well as local craft beers on tap. Don’t forget dessert - a bruleed banana pudding is made with vanilla pudding layered with caramelized bananas and bourbon candied vanilla wafers.
