slight delay, Ricardo Zarate and Stephane Bombet officially open Paiche, their Peruvian izakaya, in Marina del Rey tonight. What to expect: an open room with the kitchen in plain view, blue hues, dark woods; lots of paiche and pacu, Peruvian fish, served in many forms; rocoto-spiced sauces and other Amazonian spices and ingredients, much like Zarate's Picca and Mo-Chica; and a pisco-, rum- and tequila-heavy cocktail list.
