Oliveto's Upcoming "Fare is Fowl" Bird Dinners

This one’s for the birds (sorry, we couldn’t resist). Over in Oakland, Oliveto’s executive chef Jonah Rhodehamel has just announced his upcoming "Fare and Fowl" menu, a special four-nights series of  bird dinners, running May 7-10, that will feature a slate of a la carte dishes showcasing various locally sourced wild game birds including Liberty Farms ducks, Philip Paine's Sonoma pigeons, Bud Hoffman hens, geese, Guinea hen, quail, and pheasant. Selections will include buttermilk-fried quail, hen and lobster boudin blanc and a salad of duck confit with duck-fat roasted vegetables. (Check out the full menu here). Rhodehamel hopes to make this a zero-waste endeavor and plans to utilize every edible part of the bird including livers, cock’s combs and bird fat to make terrines. The "Fare and Fowl" bird dinners will be offered during regular dinner service hours but reservations are strongly encouraged (510-547-5356 or online).
