Hutong to Bring Northern Chinese Cuisine to London

Hutong - one of Hong Kong's best restaurants -  will bring the relatively unknown cuisine of Northern China to London for the first time when it opens in the Shard in June.

Taking inspiration from the Sichuan, Shanghai and Shandong provinces, signature dishes at the 130-cover restaurant on level 33 of the tallest building in Western Europe include a crispy deboned lamb thrice marinated over a 24-hour period and crisped in the wok; Red Lantern crispy soft-shell crab with Sichuan dried peppers; 'Kung Po' wok-fried prawns with cashew nuts and chilli; and chilli-spiced bamboo clams in Chinese rose wine and chilli sauce.

Founder David Yeo will also open Aqua Shard - a contemporary British restaurant - on level 31 of the Shard in July.
