Executive Chef Out at Boarding House, New Pastry Chef In at Nightwood

Well, that chef didn’t last long. Only four months after opening Alpana Singh’s multi-level, wine-focused Boarding House, executive chef Christian Gosselin has been replaced by chef de cuisine Bjorn Rasmussen. Goeeselin, a Canadian-born chef, delivered a menu of hearty fare such as poutine, chicken three ways and veal chops that did not fit the wine-centric restaurant. A new menu will focus less on meat and more on Mediterranean and lighter flavors. The 312 Dining Diva broke this news over the weekend.

In a kitchen on the other side of town, new executive pastry chef Sarah Mispagel is getting her footing at Nightwood. She was formerly the pastry sous at Sofitel. “I did things there that I never thought I could do, like learning how to properly temper chocolate and make beautiful truffles and macaroons, but it was definitely a different environment; more corporate and sterile,” Mispagel said on the Nightwood blog. She already has several desserts on the menu including an apple upside down cake with rhubarb, oat streusel and buttermilk-rhubarb ice cream.
