Daniel Patterson Talks Philosophy and Etymology in his Cookbook Trailer

Although Daniel Patterson (Coi) has become one of San Francisco’s most celebrated chefs, it’s taken awhile for the dining public to figure him out. In this new promotional trailer for his forthcoming cookbook Coi - Stories and Recipes (Phaidon Press), Patterson talks about the challenges of acclimating to the San Francisco dining world, his desire to express emotion through food and why he chose the archaic medieval word “coi” (which means “quiet” or “tranquil”) for the restaurant. Sure, Coi, which is tucked away from the hustle and bustle of Broadway, has a “chill environment”, but he confesses “No one know what it means or how to pronounce it and that kind of fits us too.” [You Tube via Inside Scoop]
