When it comes to food, Philly’s doing pretty well. A glance at a Food & Wine piece on Philadelphia dining from 2009 shows how far we’ve come in just four years. No cocktail culture? Good luck finding a top restaurant today without a creative, bespoke drink list. Only “a few” exceptional artisans? We’re now swimming in charcutiers, coffee roasters, bakers, cheesemakers and chocolatiers. However, there’s always room for improvement. Here are eight things we’d love to see happen in Philadelphia - sooner rather than later.
