Best Thing We Ate Last Night: Ame's Porcini Soup and Faux Grois Ice Cream Sandwich

There was no shortage of amazing food at last night's Meals On Wheels Star Chefs and Vintner Gala but our favorite was this whimsical "soup and sandwich" combo from Hiro Sone and Lissa Doumani (of Ame and Terra) that was served during the reception preceding the sit-down dinner. The duo were on hand doling out small demitasse cups of cream porcini mushroom accompanied by a savory "faux grois" ice cream sandwich.

As it turns out, the "faux grois" ice cream in question was actually made with honest-to-goodness foie gras, and since the event was being held at Fort Mason (which is considered federal land and thus exempt from the California ban), it was technically allowable. It was also technically delicious. To make the ice cream, Sone first cooks a foie gras terrine in caramel sauce to infuse it with flavor before adding cream and milk and spinning it. The finished ice cream was sandwiched between two chocolate coco nib tuiles. Sadly, you won't find this combo on the menu at either Ame or Terra. At least, not until the ban is overturned, something that Sone, Doumami and others are hopeful will eventually happen.
