Best Thing We Ate: Bacon Mac-and-Cheese From Flatiron Truck

It seems like we've had bacon on or in just about everything: Bloody Marys, salads, sandwiches, donuts, cupcakes, beer, ice cream. So an order of bacon mac-and-cheese seems almost mundane... unless it's from the Flatiron Truck. The creamy, three-cheese mac is not merely studded with bacon, but topped with big chunks of smoky, locally made bacon. It's good bacon, good cheese, quality all around, which is what Timothy Abell's "farm to street" truck is all about.

We found him at the Yamashiro Farmers Market last night, which just started back up two weeks ago, along with other food trucks and stands, craftspeople and a few produce vendors. It's quite the sunset setting for a great burger (Flatiron's is well seasoned, perfectly grilled and topped with cheddar cheese, caramelized onions and aioli), sausage sliders with thick slices of bread-and-butter pickles (Heirloom LA), ice cream sandwiches (Coolhaus) and martinis. Yes, martinis, which were sipped at the Pagoda Bar. Here's a toast to beautiful bacon-y spring nights above Hollywood.
