Perhaps it's our close proximity to Baja, but fish tacos are a bona fide staple in LA. There are fast-food and gourmet variations, but to be excellent, the simplicity of the dish - fried white fish, crisp cool cabbage, pico de gallo and Mexican crema or mayonnaise on a slightly warm corn tortilla - shouldn't be tampered with too much. Of course, everything should be fresh and of good quality, especially the fish (or shrimp), because when you have only a few ingredients, one bad one will ruin the whole composition.
