Best Thing We Ate This Weekend: Coles de Bruselas Guisadas at Black Bull

We have a bit of a philosophical conundrum: if a vegetable is covered in cheese and an egg after being cooked in butter, does it still fall in the veggie food group? Healthy or not, the coles de bruselas guisadas (that roughly translated, is sinfully delicious Brussels sprouts) at Black Bull Tapas should be a food group all of their own. The braised sprouts are served with caramelized 
red onion, pine nuts, toasted chili, blue cheese and topped with a poached egg. The tender sprouts are given a bit of crunch from the pine nuts, and each piece of blue cheese adds an unexpected salty kick. Don’t forget that fried egg, which is a welcome addition to any dish really, for a side that stands on its own.
