Sushi Etiquette Lessons at The Shiori

The Shiori - a small, traditional sushi restaurant in Bayswater (they recently relocated from their even smaller Drummond Street site) - serves melt-in-your-mouth sushi with a small paint brush to add soya sauce.

In Japan downing your sushi in the soya sauce dish is disrespectful to the chef as it implies the original flavour of the dish is not good. Be prepared to hear a stern "no dipping" from the waitress as she serves the food.

  1. I bathe my sushi in a pool of wasabi sauce and that's how I like it. Born and raised in Japan, I know what chefs want most from the customers is that they are happy. As often as I eat sushi, I've never met a snobby chef who tells me how to eat sushi.
