Ruth Reichl Thinks Fine Dining Will Make a Comeback

Is the time ripe for white tablecloths, servers that actually take care of you, and, dare we say, required ties for dinner? People seem torn. Today it's all about comfort, everyday eating, big food, loud spaces. We recently asked Top Chef Seattle runner-up Brooke Williamson and she thinks stuffy restaurants have their place but it's not really the wave of the future. Ruth Reichl disagrees.

The former Los Angeles Times and New York Times restaurant critic, and Gourmet and Gilt Taste editrix says fine dining will be back because the rich affluent people fueling the scene will want it. "I think within a few years there's going to be an extreme backlash," she tells the Daily Dish today. "Those places they're eating now aren’t cheap. I predict you’re going to start seeing - not this year or next year, but within five years - the comeback of the formal dining experience. They’re going to want to go out and get more for their money than just another place you can get good food and shout at each other."

In LA, restaurants like Providence and Melisse have weathered the casual-dining storm rather well, but even Wolfgang Puck decided to go more casual at Spago. Although service is impeccable and it's still a high-end experience at his Beverly Hills flagship, small plates and a Morning Becomes Eclectic soundtrack are definitely more of an "everyday" draw.
