"Foods have what we call flavor profiles, which are kind of like classifications of how they taste. There are just a few main flavor profiles: sweet, salty, bitter — and, of course, fat. And then you have factors like spiciness, acidity, and texture to play with. Texture is important because it sets off the ingredients against one another in a satisfying way. Salt and acidity are the only components that actually enhance flavors. When you're putting together any dish all you have to do is keep those ideas in mind and start pairing ingredients with different flavor profiles to see if they taste good. To you."
