Peninsula Executive Pastry Chef to Open Own Patisserie this Summer

Sweet success has its perks. After running the pastry program at The French Laundry in California, Country Restaurant in New York and The Peninsula Hotel in Chicago, chef Hsing Chen announced she will open her own pastry shop in Chicago this summer. No rookie to the boutique game, she owned her own shop in New York City called Sweet Chick that specialized in dramatic wedding cakes and dessert tables. The still unnamed Chicago shop will offer these as well as Chen’s take on nostalgic American treats with European patisserie flair. This will be the chef’s first solo project and she is hoping for a summer opening.
