Noir Food & Wine, will debut Claud Co. Eatery for monthly themed dinners on April 9. In addition to Noir, Beltran, who trained under Thomas Keller and has been associated with a number of Pasadena's more notable restaurants over the last 10 years or so, has been running a successful catering company. The Eatery is sort of an extension of that, serving prix-fixe and a la carte menus on Tuesday, Wednesday and Thursday nights. Changing the menu each month allows Beltran to explore new ideas and create new dishes, but also gives the diners something different each time they visit, says co-owner Stewart Suckling.
For April, the menu is pig-themed, because you can never go wrong with pig. Dishes include pan-seared pork loin with bacon pepper jack au gratin potatoes and hericot vert; grilled rib eye with whipped sweet potatoes and cadied bacon; bacon-cheddar croquettes with spicy ketchup; warm spinach and bacon salad; and mini carnitas tacos. Don't worry, there are vegetables, too. Upcoming menus will be a tour of Provence and a spin around heirloom tomato season.
