The name Jason Chan may not immediately resonate, but maybe the restaurants Butter, Urban Union and soon-to-open Juno do. Chan is the restaurateur behind these respected establishments, and for the past year has been quietly battling stage four throat cancer. Initial treatments did not stop a two-week trip to Korea, research for his latest restaurant. However, the latest round of surgery left him without the use of salivary glands or taste buds, and facing the apex of a difficult journey. Friends of Chan launched a fund-raiser to help ease the cost of his medical treatments. Donations can be made to “ChanCan” until the end of April. They are hoping to raise $100,000. So far, they have reached a quarter of that goal.
