Former Next and Alinea Chef to Run Kitchen at New Billy Lawless Spot

With the departure of Dirk Flanigan as executive chef of The Gage and Henri, restaurateur Billy Lawless needed some new talent for his latest concept in West Town. He found plenty of talent in the form of chef Rene De Leon, formerly of Alinea and Next. The chef will bring the discipline and refinement to the more casual space opening in late June at 730 W. Grand Ave. “Food is important to me. This is my first place. It will be my three-star place in the beginning, because I won’t go to bed and I will work seven days a week until we get it where we are comfortable,” De Leon told The Dish.
