The cheese toasty at Farringdon pub, The Longroom, is given a sophisticated makeover with manchego and ricotta cheese, which is grilled between fresh bread from Gail's Bakery and finished off with aubergine, capers and pickled raisins. There's nothing childish - or unhealthy - about this snack.
