Dulce de leche - a sweet South American classic - is served at Lima, the colourful Peruvian restaurant, as ice cream with the addition of beetroot emulsion. While it might sound strange, the beetroot gave the sweet ice cream a slight earthy flavour and was not at all overwhelming. And the crunchy Amazonian maca root crust brings the whole thing together.
