Cocktails Lead New Concept at Square 1682

A total revamp of the dining room and lounge is underway at Square 1682 in the Hotel Palomar, and along with decor changes comes a new concept and tagline, “American Kitchen and Cocktails.” Chauncey Scates is leading the bar program, and her new cocktail menu was launched just in time for spring.

At the bar, Scates shows off mixology knowledge gained at The Franklin Mortgage & Investment Co. without bringing along that spot’s quixotic menu. Here, drinks are easy to decipher. They’re all listed by liquor with a concise description above the ingredient list. In the mood for refreshing rum? Go for the Mojo Rising. Rather have an herbal tequila sip? The Blue Sage is for you.

Coconut sugar, agave, maple syrup and fresh fruit juices are used instead of regular sweetener, so everything is refreshing and ready to go for spring. (Outdoor seating along Sansom Street  is on its way soon.) Check out the full new cocktail menu below (215-563-5008).
