Cochon 555 Chef Lineup Released

Everyone favorite excuse to feat on pork and get wasted on whiskey is back. Cochon 555 hits Chicago on April 28. It bring with it five chefs, five winemakers and five heritage bred pigs. According to Eater, this year’s participating chefs will be Cosmo Goss (Publican Quality Meats), Kevin Hickey (Allium), Matthias Merges (Yusho), Ryan Poli (Tavernita) and Josh Adams (June). They will compete to be crowned 2013 Prince of Porc, 2012’s honor went to Jason Vincent (Nightwood). The winner will also move onto compete in the Grand Cochon event at the Food & Wine Classic in Aspen on June 16.

This is the fifth anniversary tour for the event that raises awareness of sustainable farming of heritage-breed pigs. It also includes a buttery demo by Rob Levitt of The Burther & Larder. Long story short – lots of pork and lots of liquor. Tickets for the event are on sale now and cost between $125 and $200.
