Best Thing We Ate This Weekend: Croque-Madame From Burro Cheese Kitchen

This new South Congress food trailer has mastered all the elements of a good grilled cheese: gourmet fromage, interesting ingredients, crusty bread with grill marks and clever sandwich names. The bread in question is from none other than Easy Tiger's, another step in the downtown beer garden and bakery’s quest to take over the world.

We said yes to the Via 206, with cheddar, gruyere and balsamic-apricot-fig spread on thick beer bread, but the real revolutionary was Burro’s take on the classic croque-madame, with gruyere, Serrano ham, pesto aioli, a fried egg and dulce de leche on buttery sourdough. We’re drooling just thinking about it.
