Best Thing We Ate This Week: Burrata Sweet Potatoes at Pitruco Pizza

Earlier this week, Pitruco Pizza ovenmaster Jonah announced he would be offering the first-ever side dish special from the window of his mobile pizzeria, and we knew we had to try it. In homage to the origin country of his Neapolitan pies, he calls the dish burrata e patate dolce, and how sweet it is.

Sweet potatoes are roasted to a tender softness, heated in the 900-degree brick oven, and topped with a sizeable chunk of fresh burrata. On top he sprinkles crushed pistachios and spiced salt, and drenches the pile in thick balsamic vinegar and a swirl of olive oil. It's unceremoniously handed over in a foil wrapper with a plastic fork, but it doesn't matter. The combination of sweet, creamy, crunchy, salty and sour is perfect.

The person taking the orders at the window mentioned the special to every person who approached, and every person ordered it. Just before the end of the night, the sweet potatoes sold out. No telling when Pitruco will have the dish again, or what other creations Jonah will come up with, but it’s worth stopping by for the pizzas no matter what.
