Apparently the key to Din Tai Fung Dumpling House is to go in the middle of the afternoon. You'll find an empty dining room, the dumpling makers busy in the kitchen, and a friendly efficient staff ready to seat you and get you fed fast. At least that was our take yesterday when we ended up in Arcadia on a fluke, hungry and craving XLB. Of course, we'll even fight the lines and crowds for those juicy little morsels, easily the best soup dumplings we've had in awhile if not ever. They're like magic - a soft almost translucent wrapper holding a tiny little ball of meat, shrimp or crab, the whole thing bursting with flavor with one bite. A little dab of soy and chili paste will do ya, too.
