Alla Spina food, you think pork - pig pot pie, mortadella hot dog, fried pig tail, sausage - with maybe some trotters on the side. But the Vetri Family spot has been slowly but surely veg-ing up its menu. The North Broad restaurant now offers a burger that’s entirely vegetarian, yet still lives up to the birreria’s reputation for deliciousness.
General manager Steve Wildy is a pescatarian, and to please him and others of similar leanings, chef Mike Deganis worked hard - fueled by plenty of red meat, we’re sure - to come up with a great veggie patty. The end product is made with beets, rice, lentils, garlic, onion, almond butter, and bread crumbs and is firm, not smushy, but also juicy instead of dry and starchy.
It can be yours for $12 on a sesame seed bun with mayo, cheddar and a side of specially veggie-fried salt-and-vinegar potato chips (the regular chips are fried in beef fat).
