5 Must-Try Dishes on Rex 1516’s New Spring Menu

Chef Justin Swain is getting into his groove at Rex 1516. He was promoted when illness forced Regis Jansen to step down due to illness, and the new spring menu is his first. This menu also marks the first time much-requested fried chicken is being offered at the Southern comfort food spot. (That dish is literally the result of blood, sweat and tears - when the chef was developing hot sauce for it, a hot drop splattered in his eye, causing loud howls and consternation.)

Swain credits his grandfather with sparking his interest in food - they went to restaurants all over Philadelphia when he was growing up in Mayfair - and he started working as a prep cook when he was 13 years old.
