When we say there is a reason why these hot up-and-comers made our 30 Under 30 list, we weren't kidding. We already knew that Ashley Ragovin, who's been steering the front-of-the-house ship at Animal for the last couple of years, will be running things for Ludovic Lefebvre, Jon Shook and Vinny Dotolo at what might just be the most anticipated restaurant opening of the year, Trois Mec. We've long been impressed with her grace, panache and wine picks on Fairfax, so we expect great things at the forthcoming Hollywood restaurant, too.
But one of our other twentysomething winners is heading to the Highland and Hollywood spot, too: Doug Rankin, who's been working meaty magic at Chris Cosentino's Pigg at Umamicatessen since it opened. Rankin, who also worked at Ink. and Saam at The Bazaar, is now working alongside Lefebvre, Dotolo and Shook as their new chef de cuisine. This is getting more and more exciting by the minute.
Other than that, Dotolo and director of operations Helen Johanssen were hilariously tight-lipped about any more details on Trois Mec at Monday night's party. We asked them when it would open or what the menu will be, and they joked about using smoke bombs and magic to escape our queries (they didn't). But we did gather one more small detail from Ragovin last night at Animal, which we kind of already knew - there are less than 30 tables at the new restaurant. So that means, as suspected, getting a reservation will be close to impossible. If Ludobites sells out in two minutes, what do you think will happen here? We'll keep you posted.
