Chef Nathan Volz will even pick up a bow for the first time in several years - he’s a former violinist - to join the Philly Pops quartet, though not until dessert, when he’s done preparing the five-course meal. Dishes that will accompany the live music, played throughout the Ritz Carlton dining room, include sunchoke velouté with lobster and spicy halibut.
