The Cowboy: Coffee Beef Jerky from Side Project Jerky and Rival Bros.

Local beef wrangler Side Project Jerky is out with its second chef-collaboration flavor, and it incorporates our current favorite ingredient: coffee. Dubbed “The Cowboy” in honor of the cattlemen who roasted their own coffee out on the range over an open fire, the jerky is spicy and earthy.

Jonathan Adams, former Pub & Kitchen chef and partner in local roastery Rival Bros. Coffee, developed the recipe for the new beef chew. It incorporates guajillo chiles, balsamic vinegar and a double-strength brew of Rival Bros.’ Whistle & Cuss signature beans.
