Seersucker Team Will Open Nightingale 9 on February 21

Carroll Gardens is set to get its first Vietnamese restaurant when Nightingale 9 opens in a couple weeks. The new venue is from the team behind popular neighborhood haunt Seersucker - chef Rob Newton has attained accolades for his Southern-inspired fare at that eatery, but this menu will focus on a completely different area of the world. While he liked the country's cooking since culinary school, he decided to open the new haunt when his favorite Vietnamese resto Doyers closed down.

Rice noodle soups will be prominently featured on the menu - stuffed with ingredients like Berkshire pork with country ham, cracklins and lemongrass. There will be a large push on customization, in traditional style. Guests will be able to add dipping sauces, hot sauces and herbs to their dishes. One highlight promises to be be the Banh Mi, which is using bread provided by Caputo's Bakery in the neighborhood. Wine and beer will be served on tap, and a special coffee program will feature counter culture java dripping into sweetened condensed milk. Pay attention for signs of life at 345 Smith St.
