Amanda Rockman Departs The Bristol and Balena; Nate Sears Leaves Vie

30 under 30 honoree and executive pastry chef Amanda Rockman will leave her position as of February 23. The young chef spent the past three years working with BOKA group restaurants, beginning at The Bristol and then assisting with Balena when it opened last year. In an official statement, Rockman said, “After an incredible three years with The Bristol and most recently the BOKA group, I have made the decision to pursue other culinary opportunities. I will miss the amazing individuals I had the opportunity to work with on a daily basis.”

Outside of Chicago, chef de cuisine Nate Sears is leaving Vie. He worked at chef Paul Virant’s Western Spring restaurant for the past eight years, and is leaving to try opening his own restaurant.
