Mixologist Michael Simon Lands at Qui in Austin

He had a good run that included time at Graham Elliot, Acadia and The Bedford. However, a slew of scandals that concluded with his hasty departure as beverage director of the Carriage House because of “creative differences” was the last straw for Michael Simon in Chicago. He packed up his shakers and traveled south to work as bar manager for Paul Qui’s at his flagship restaurant Qui.

"The kinship with chef Qui's creativity, drive, and overall philosophy resonates powerfully with my own. At this point in my career it wasn't a matter of deciding to come here, but rather asking myself how quickly I can come work for this man," Simon said, according to Eater Austin.
