first meal in Philadelphia. This week we tapped Kevin Sbraga, Top Chef Season 7 winner and chef-owner of Sbraga on the Avenue of the Arts.
Zagat: You have an old culinary school classmate visiting from Florida who's never been to Philadelphia before. Where do you take them for their first meal in Philly, and what do you suggest they try there?
Kevin Sbraga: I’d take them to Han Dynasty, and recommend everything. No, specifically I’d recommend the crispy cucumbers, beef tendon, pork belly, chicken in chili oil, rabbit and the cumin lamb. I eat there or get takeout from one of Han Chaing’s restaurants at least once a week.
I first tried Han’s food in spring of 2011, and I had never had Chinese food that I liked. A friend of mine was having dinner at Han Dynasty, and insisted I join him. He wouldn’t take no for an answer. So I met him there with no intentions of eating. But Han came over to the table and I felt forced to eat.
To my surprise, the food was delicious. It really didn't hit me until the next day. I realized Han’s Sichuan cuisine was life changing. And I realized I did like Chinese food - it just had to be his.
