First Look at Saison 3.0: Now Open

The hand-blown stemware is set, the evening menus have been printed (from a customized font that replicates the handwriting of sommelier and co-owner Mark Bright) and in a few short hours, Joshua Skenes, the man whom Food & Wine crowned one of the ten Best New Chefs in 2011, will be opening the doors to his latest (and supposedly final) incarnation of Saison. We already told you about the new 18- to 20-course tasting menus ($248 per person with optional wine pairings), the 18-seat open-to-the-kitchen dining room and Mark Bright’s new top-flight cocktail program. But for those of you who aren’t one of the elite few who managed to snag a coveted opening-night reservation, we offer this sneak peek inside the restaurant.
