Evan Funke's Porchetta Pop-Up, Next Week in Hollywood

It's true: porchetta is super popular right now. You can find it everywhere, at restaurants like Sotto, Bestia and Mozza 2 Go, but chef Evan Funke's porchetta sandwiches will cause a frenzy. The former Rustic Canyon chef has been serving only this one thing from a truck while his Helms Bakery restaurant, Bucato, is being built out, and we've known people to drive across town just to get one. You usually don't know where the truck will be until it pops up on Twitter, but now you can definitely find it next Wednesday, (Feb. 6) at Square One Dining, where he's doing a one-night only pop-up dinner. 

He's bringing the porchetta as well as lamb's heart skewers, fried artichokes with mullet roe, guitar pasta cacio e pepe, veal sweetbreads with prosciutto and brown butter, octopus with chickpeas and green garlic, and a trio of house-made gelatos. The eight-course menu, a preview for Bucato, is $65 per person. Make reservations at This Is Not a Pop-Up.
