Bludso's Bar & Que, the new restaurant from the guys behind The Golden State and Bludso's BBQ, for a little Super Bowl preview party action, and got to sample some of what's in store for the restaurant. Think: Fantastic smoked pork spare ribs, luscious pulled pork, rib tips, chicken, brisket, damn good macaroni and cheese, meaty baked beans, greens, corn bread - the works.
We kind of went crazy for the pork ribs ourselves, which had an awesome smoke ring and were tender, falling off the bone. These are dry-rubbed meats with the sauce on the side, and that spicy-sweet bbq sauce was a hit at our table. But what makes this bbq joint different is that not only is the 'cue that good, the cocktails are simple but well-crafted - we loved the margarita with a spritz of beer - and craft beers expertly chosen, a la Golden State. The former Tar Pit space has been completely gutted, now one big open room with windows letting in some natural light from the front, and a patio. It reminds us of Wurstkuche in a way, only with ribs, fried bread-and-butter pickles and bourbon, just very communal, loud, chatty. If they can deliver on a daily basis what they were previewing for one night, watch out. Look for an official opening some time next week.
